Nowadays, we don't really think about what, how, and when we eat. We often eat unhealthily, too fast, and without paying attention. During a one-day workshop for Food Design students at the Scuola Politecnica di Design (SPD) in early July, we explored how we can reverse this trend.
We started the day with finding everyone’s favourite ingredients, smells, and textures. The enthusiastic group of international students then got the assignment to design a healthy, attractive, smart dish concept to respond to the issue through food design. How can we positively influence our eating behaviours during a smart meal?
The students used the eating behaviour circle method and inspiration cards (seen in the picture) as design tools to develop a smart dish concept. The final concepts were tested at the end of the day: is your dish design working?
