All you can eat enough restaurant

All You Can Eat Enough is an experimental pop-up restaurant that combines food design, gastronomy, and behavioral science. It serves as a live testing ground for new ways to positively influence eating behavior and promote healthier food choices. Knowledge and experience from science find their way into practice through food design and culinary creativity.

The first edition of All You Can Eat Enough took place on 8 and 9 November 2018 at Proeflab Wageningen, initiated by food designer Katja Gruijters in collaboration with Prof. Dr. Ir. Kees de Graaf of Wageningen University & Research. During an elaborate six-course dinner, guests, with their consent, were observed as part of a behavioral study. The aim was to contribute to the development of knowledge about how food design influences eating behavior. Participants included invited representatives from across the entire food chain.By combining scientific research with creative food design, All You Can Eat Enough offers an engaging and enjoyable setting for behavioral testing, without compromising the dining experience.

The pop-up restaurant forms the core of the project. It functions as a live research environment where guests can enjoy carefree dining while their eating behavior is subtly observed and tested. In this practical setting, guests were unaware that they were part of a research context, allowing natural and spontaneous responses to emerge. This live research project generated valuable data and new insights, which contribute to a growing body of knowledge and experience aimed at helping improve eating patterns and support healthier, more conscious food behavior.
