Easter falls late in April this year, and we want to celebrate by putting the dandelion – often seen as a weed – in the spotlight. Did you know you can eat this plant’s roots, leaves, and flowers? The leaves, also known as mole lettuce, are a free alternative to store-bought lettuce. This Easter, let’s embrace the vibrant yellow of the dandelion, a colour that symbolises new life.
