A good day for egg-lovers
Sunday 5 July was the day of the Egg. More than 20 participants came to poultry farm Tomesen in Doetinchem, to visit the Farm Food Family workshop on the Phasianidae family. After a passionate story from Roy Tomesen about his family business, de participants went to work. Fresh eggs were taken from the loft, tapped, and the yolk was separated from the egg white. Chef Karin Goossens guided the participants in egg making, topped with fresh edible flowers from the meadow. After that, we tried a new sport in the Achterhoek: the Egglympics. From catching eggs to rolling and stacking them: it was fun for everybody. We ended the day with chicken, because why don’t we eat the laying hen? Chef Karin surprised us with a delicious piece of laying hen, with a hollandaise sauce. From egg till chicken, we’ve come full circle. Thanks to all who contributed!
