Cradle to cradle
For the VMT Food Event, featuring circular food economy pioneer Michael Braungart, Katja Gruijters devised a menu made from food waste. Returned baked goods were turned into croutons and made into a giant bread table. Leftover rusks, pips and fruit peels were made into edible table cloths. Together with fresh ingredients, the food waste made for a surprising dinner.
